Banana Oat Breakfast Bars

With our busy lives, it seems as if we never have time for a proper breakfast. Breakfast is the most important meal of the day, and the AMAIÒ team wanted to share with the #WomenOfAMAIÒ a quick (and easy) bar recipe to use on days when time feels short! These banana oat breakfast bars are perfect to grab when you're on the go, to snack on between meals, or have with a morning cup of hot tea!

Ingredients:

4 very ripe bananas

2 Cups of whole oats

1 Cup of almonds

1 Cup of pumpkin seeds

5 Dates

2 Heaping tablespoons of chia seeds

2 Tablespoons of flaxseeds

1/2 Cup of cacao nibs

1 Heaping tablespoon of cinnamon (add more or less to taste)

1 Heaping tablespoon of maca (optional)

 

Prep time: 15 minutes

Cook time: 20 minutes

Quantity: Approx. 14 bars

Instructions:

Preheat oven to 400 degrees.

In a medium-size mixing bowl, mash bananas until they reach a smooth consistency. In a blender, combine oats, almonds, pumpkin seeds, flaxseeds, chia seeds, maca, and cinnamon. Pulse to chop almonds into smaller pieces and smooth out oats (this makes for a smoother consistency and is a personal preference!). Once the desired consistency is reached, add the oat mixture and cacao nibs to mashed bananas. Stir until combined and a doughy consistency is reached. 

Portion into your desired shape and layout on a baking sheet. Cook for 10 minutes per side (20 minutes total).

Once finished remove from the oven and enjoy! Freeze half to last you weeks and easily warm in the microwave for 20 seconds for a delicious treat at any time of the day.
